Ingredients

    Method:

    1. Trim excess fat from the chicken thighs and slice the garlic. Cut cherry tomatoes into wedges and tear lettuce into pieces.
    2. Place chicken skin-side down in a heatproof container. Add garlic, Lakanto low sugar sukiyaki sauce (90mL) and sake. Cover loosely with plastic wrap and microwave (600W) for 5 minutes. Flip and microwave for another 5 minutes.
    3. Heat a frying pan with oil and sear the chicken skin-side down until both sides are golden.
    4. Add Lakanto low sugar sukiyaki sauce (1 tbsp) and toss until evenly coated.
    5. Slice and plate the chicken. Serve with cherry tomatoes and lettuce.
